The term "biscuit" was used by the young woman who sold me this cheese at my nearby farmers' market. Sorry the term was confusing. You could use a round of pressed, fresh goat cheese to play around with marinating. I've also seen marinated feta and herb-marinated mozzarella balls. Good luck!
